Day 47: White Bean Puree with Asparagus & Fried Eggs
[My rating: 4.5/5] For as simple and affordable as this meal is, it's quite delicious. The one thing I would change is I would puree the beans in a blender before cooking them with the broth and cheese. Mashing them in the pan I ended up with many whole bean skins that have an unpleasant texture.
