Day 50: Quinoa, Orange, and Blueberry Breakfast Salad with Almonds
[My rating: 4/5] I was surprised to enjoy this as much as I did. The dressing threw me off. Something about balsamic vinegar with the fruit made it a little less pleasant. Next time I would try apple cider vinegar. I might even try using bell pepper instead of the spinach and include some of the orange’s juice in the dressing.
